Weekend Reading – Savory Reads #8

Savory Reads are back with another post full of delicious, vegetarian (actually vegan) savory meal ideas that will hopefully inspire you to try something new this weekend! I picked a bunch of  wonderful looking recipes that should cater to all kinds of different tastes, ranging from dips, subs to asian food. So let’s jump right in and get inspired to cook a savory, vegan meal!

Spinach Artichoke Dip from Feasting on Fruit

Let’s start off with something I was always intrigued by, but have never made myself – a Spinach Artichoke Dip by Natalie from Feasting on Fruit, this one is actually portioned out for one serving, so ideal if you are in the mood for some dipping action, but don’t want to make a huge batch.

Craving a good old classic meatball and marinara sub? How about this Vegan Beanball Sub with Sautéed Kale Marinara by Sophia from Veggies Don’t Bite? Just look at the picture above and then try not to drool. You know you want this sub. I do. Very much.

Lentil Quinoa Salad with Spinach and Citrus from Veggie Inspired Journey

Next up, the Lentil Qunioa Salad with Spinach and Citrus by Jenn from Veggie Inspired Journey. Before reading through the whole recipe, I was already sold on it by the fact that is has quinoa, spinach, pecans and citrus in one dish. Oh yes, four of my favorite things combined in one dish – this can only be a winner. She uses applesauce in her oil-free vinaigrette, which definitely makes me curious about the taste of it!

Asian Noodle Salad from The Chef next Door

Asian Noodle Salad anyone? Sarah from The Chef next Door, has created a homey, delicious version. It’s made so quickly, makes you full and still has lots of veggies in it. And honestly, Asian noodle salad is always a good idea!

All Thai'd Up Peanut Fondue from My Wife's Muffin

Last but not least, a thai recipe! It’s the All Thai’d Up Peanut Fondue by Gregg & Mae from My Wife’s Muffin. I have only ever had classic fondue where you use oil to actually cook the array of food that you want to indulge in. This is definitely an intriguing variation and worth checking out!
