Weekend Reading – Savory Reads #9

Hello Friday! Have no idea what to make for lunch or dinner this weekend? Want to try something new? I’ve done a little roundup from some blogging friends of mine that have some delicious, vegetarian savory treats up their sleeves! Without further babble, let’s jump right in and let me make you hungry!

Avocado Sandwich with Sprouts from Win-Win Food

First off, Lucie’s, from Win Win Food, extremely simple and delicious looking Avocado Sandwich with Sprouts. I’m one of those people who could eat avocado all day, every day. Breakfast, lunch and dinner. That’s how versatile this recipe is too – no matter what time of the day, it’s ready in moments and makes a healthy meal (or snack, or appetizer…).

Quinoa Paella from Farm on Plate

Medha from Farm on Plate  wrote this wonderful take on Paella, namely Quinoa Paella! I can nearly smell the dish through the screen and btw. her writing is really fun to read too, because who wouldn’t chuckle when she said that she has seen men fight over who can be the grill master, but never any men fighting over the stove 😉

Vegetarian Eggplant Burger from Nombelina

Is a savory recipe roundup complete without a burger? Not really (well, don’t hold me to it though 😀 )! PJ vom Nombelina made this awesome looking Vegetarian Eggplant Burger – who said vegetarian burgers are boring? For sure not her creation!

Veggie Stuffed Crepe from Southern Vegan Kitchen

Next up, this Veggie Stuffed Crepe from Stacey’s Southern Vegan Kitchen. This is not your average crepe though – it’s made from chickpea flour and well, vegan! Check it out for a yummy inspiration 🙂

Kale + Gruyère Puff Pastry Tartlets from Local Savour

Last but FOR SURE not least, are Elizabeth’s Kale Gruyere Puff Pastry Tartlets! I love her blog Local Savour in general, but those are so easy and quick to make, how could you not give them a try as a snack, for brunch or as an appetizer? I love putting pretty much everything into puff pastry (it’s actually a little miracle I haven’t posted a single puff-pastry-using recipe!), and the combination of these flavors honestly just screams “eat me!!!!”.
