It’s Friday again! This week this means another edition of Weekend Reading – Savory Reads! I’ve compiled another roundup of five delicious, colorful, savory, vegetarian recipes. Need inspiration for what to cook this weekend? I’m sure there is something amongst those recipes for everyone.

Skip the traditional pasta for once and make zoodles instead!Β As the meatballs use lentils as a base, they are perfect if you are looking for vegetarian meatballs that don’t use seitan.

Who doesn’t like fries? Carolyn from Peacemeal XO shared a really easy oven baked friesΒ recipe, that is spiced up with rosemary and sea salt plus a vegan ‘mayonnaise’ dip! The recipe is simple and straightforward, what could you ask for more.

Winter Vegetables Ragout by My Gut Feeling
Even though it’s spring already, I’m sure you all still have some winter vegetables hanging around, right? Joana, from My Gut Feeling, created this colorful winter vegetable ragout with kale and quinoa, which would be the perfect option to use those up before it gets too warm to enjoy a slow cooked, warming meal!

Palak Tofu by Elephantastic Vegan
Last but not least, let me show you this Palak Tofu dish from Elephantastic Vegan. Bianca is a fellow Austrian food blogger and I just recently came across her recipe. She created this delicious vegan spinach curry version of the traditional Indian dish, using tofu instead of paneer. Reading through her recipe, all the delicious ingredients made my mouth water!
