Green Cucumber Mint Smoothie

Green Cucumber Mint Smoothie - nut free, vegan, refreshing |

Happy Monday guys! Even though it hasn’t really felt like the end of May here lately, I’m hoping for warmer temperatures soon! This smoothie is already a preparation for those temperatures, because it’s light, refreshing and absolutely thirst quenching. I first came across aย green cucumber mint smoothie in a little coffee shop here and really enjoyed the taste. I didn’t enjoy the price-tag as much, especially for the frequency I crave this smoothie! They also used mint and cucumber syrup in addition to fresh fruit and veggies, but I wanted it to be all natural and still delicious.

So here we go! This is such an easy, nut and milk free vegan smoothie. It’s not a meal replacement though, so if you want to have this alone for breakfast, I would recommend adding in some oats or nuts after all. I love this smoothie just as a drink and a little pick me up in the afternoon. This green cucumber mint smoothie is refreshing, light and still has greens in it! Don’t worry though, it does not taste green at all. It has cucumber, orange, banana, spinach and mint in it, and through all the tasty goodness from the other ingredients, the spinach is completely hidden.

Green Cucumber Mint Smoothie
Serves: 1
  • ½ cucumber
  • ½ orange*
  • 1 banana (frozen)
  • 1 handful spinach (frozen)
  • 1 small handful mint leaves (to taste)
  1. Blend first the cucumber, orange and mint leaves up. Rather just add a few first and try the mixture, because mint leaves can be quite potent!
  2. Once you have no more bits in there, add the frozen banana and spinach and blend until smooth and frothy. Pour into a glass and enjoy!
*I simply peel it and take off most of the white "bits" and then just throw it into the blender. You might want to make sure that there are no seeds in the orange, before you blend it though!

    1. Hey Nรณri, thank you for stopping by ๐Ÿ™‚ Yeah, the weather is not exactly nice here either today, very grey and dreary. I hope it will improve soon! I just love the combination of this smoothie, it really quenches your thirst and also doubles as a light snack ๐Ÿ™‚

    1. Hey Jennifer, yes definitely give it a try ๐Ÿ™‚ It’s such a good combination!

    1. Sure! I don’t use any kind of special blender to be honest, but we have a food processor/blender combination from Braun called Multiquick 7 and it works well for me. It does need a little patience sometimes though ๐Ÿ˜‰

    1. It really is ๐Ÿ™‚ Let me know when you tried it! I hope you enjoy it as much as I do ๐Ÿ™‚

  1. I just love all the creative ways you use mint! It took me a minute to realize how unusual a milk/water free smoothie is, but that’s awesome! Recreating over-priced restaurant or packaged items is one of my favorite things to do, because I’m like you, when I love something I want to be able to have it as often as I want without the price tag.

    1. Thanks Natalie ๐Ÿ™‚ I love mint so much, I want to put it into everything ๐Ÿ˜€ when making this smoothie, I realized that the orange and cucumber make it already liquid enough, so I didn’t need to add anything else. I’m all for really simple ingredients! You could add some water or even ice if you wanted to make it thinner. But I like my smoothies on the thicker side, as long as they are still ‘sip-able’, if that’s even a word! Making this smoothie at home makes it such a really inexpensive treat, as all the ingredients are usually on the (very) cheap side ๐Ÿ™‚

  2. WOW that looks so healthy and refreshing, I need one of those on a day like this in NYC
