Hey guys, it’s time for another Weekend Reading – Savory Reads edition! I didn’t intend to initially, but besides having some asparagus recipes in here, all but one are actually pasta recipes. Can you tell, I love pasta. 😉
Asparagus season is in full swing here right now, so how could I not have included asparagus in this roundup? Lucie from Win Win Food made such a simple, delicious vegan version of it, I absolutely love it. Florian from Contentedness Cooking made this Zucchini Macadamia Crunched Pasta, which is such a genius idea. I would’ve never thought to include macadamia nuts in a pasta dish and with the zucchini and strawberries, it’s just a perfect spring and summer meal!
Next up is the Lemon, Spinach and Asparagus Spaghettini recipe that Jessica from Two Green Peas came up with. This just screams spring to me! Asparagus, lemon, and she also added sun dried tomatoes into the mix – a perfect light and spring like combination.
