Frozen Berry Yogurt Bark (vegan)

Hello guys! Today I’ve got a little treat for you that I love during summer time. If you are anything like me, you really don’t want to heat up your house even more by baking for hours. That’s why I’m sharing one of my favorite, sweet, quick and dairy-free snacks. A vegan frozen berry yogurt bark! It’s so easy, you don’t even really need a recipe, but sometimes we all need a little reminder of the really easy snacks that we tend to overlook.

There are endless combination options for frozen yogurt bark. I love frozen berry yogurt bark, because, well, I simply love berries! I usually use plain soy or coconut yogurt as a base, but you could also use flavored yogurt, just make sure it’s not loaded with sugar – otherwise it defeats the purpose of being a healthy snack. I’m sure it would be delicious with little pieces of kiwi or apricots as well…let your imagination run wild! As the 4th of July happens to be tomorrow, this would also be a perfect red-ish (well, it’s more pink…but we are not going to be that nit-picky here, are we? πŸ˜‰ ), white and blue snack if you celebrate.

Frozen Berry Yogurt Bark (vegan)
  • 1 cup plain dairy-free yogurt
  • 1 handful raspberries
  • 1 handful blueberries
  • Maple syrup to taste
  1. Use a small pan and line it with parchment paper, this will ensure that you can easily lift the frozen bark out of the dish.
  2. Add maple syrup to taste to the yogurt and spread it evenly in the pan.
  3. Spread the berries on top, like you can see in the pictures.
  4. Freeze over night and break in small parts. Enjoy!

As little disclaimer though, this is a bit messy to eat. The yogurt starts melting easily, so your fingers will get a bit sticky. But hey, it’s so pretty, you can deal with this, right?
