Happy Monday! Today’s recipe is another super simple and easy one, as I found out that you guys love my simple recipes. I agree with you, who really wants to be in the kitchen for a prolonged time right now? Let alone heat up the house even more if you have the stove or oven on for longer. So let me introduce you to my easy coconut rice pudding, that is ready in 15 minutes and naturally vegan. It’s super easy to make it look pretty too, just layer it in a glass with fresh fruit! The secret for such a quick, yet creamy rice pudding? Not pre-cooked rice this time!
The secret to this super fast rice pudding are rice flakes. Rice flakes can be found in health food stores, drug stores with a health/breakfast food aisle and often times even regular supermarkets. They are usually fairly inexpensive and make cooking rice pudding so much easier and quicker. I really enjoy coconut, so I used light coconut milk for this coconut rice pudding. Using this milk also makes the pudding naturally vegan. If you don’t like coconut, you could also use almond milk or any other milk that has a slightly higher fat content (as opposed to for example rice milk), to make it more creamy. Theoretically you could even use full fat coconut milk, but that would then really make it a very decadent dessert. 😉 Layer it in a glass with chopped up fruit to make it a pretty, parfait style breakfast or dessert.
- 5 tbsp rice flakes
- 1 cup light coconut milk
- 1 pinch ginger powder
- Combine all the ingredients in a small pot and bring to a boil.
- Turn the heat down to medium, stir occasionally and let cook for 5 minutes.
- Turn off the heat, stir and let it sit for 10 minutes.
- Layer it in a glass with chopped up fruit for a beautiful presentation.
