A few days ago, the weather has been quite cold and rainy here, like October at the beginning of August (before the heat wave hit us again)! Also, with the newsletters and catalogues coming in of the new fall fashion, I kind of got thinking about pumpkin recipes, like my Pumpkin Balsamic Bruschetta. Austria doesn’t go as pumpkin crazy as the US does, but I personally love pumpkin. I was also lucky enough to spend last fall in the US, so I got a good taste of all the pumpkin deliciousness that was available to me. So I figured, let me spread some fall anticipatory vibes and show you my 11 favorite pumpkin recipes!
You might all know my love for baked hot breakfast, and Annie from An Unrefined Vegan really hit the nail on the head with her gluten-free Baked Pumpkin & Whole Grain Hot Cereal.
Ginny’s (from Vegan in the Freezer) Easy Pumpkin Waffles taste like pumpkin pie – who doesn’t love waffles?
I love blender pancakes and Ceara from Ceara’s Kitchen made Flourless Pumpking Oat Blender Pancakes!
Last but not least, Cinnamon Apple Pumpkin Pie French Toast from Veggies Don’t Bite. I’ve never made a good vegan french toast (mine all turned out soggy), so I’m really keen on trying Sophia’s version!
Dessert & Snacks
Natalie’s (Feasting on Fruit) Granola-Topped Pumpkin Maple Muffins are more than just snacks – they are a perfect breakfast too! But as I’m someone who eats muffins as snacks or desserts, I figured I put it under this category. 😉
Holly from My Plant Based Family also made a delicious, Gluten-Free Pumpkin Muffins recipe, that might or might not have chocolate chips in them!
Julie from The Real Food Kids made the perfect recipe for when you have some leftover pumpkin puree: Pumpkin Bites!
Kristina aka Spa Bettie revamped a classic: whoopie pies! Her Pumpkin Whoopie Pies with Ginger Cream sound tempting for sure. 🙂
Kathy from Healthy Slow Cooking has you covered for your pumpkin spice latte habit with there homemade Pumpkin Coconut Caramel Sauce. For sure better for you than the Starbucks version!
Last but not least in the sweet department we have Chocolate Pumpkin Butter Cups from Alisa at Go Dairy Free. Yes you read correctly, no peanut butter involved in those treats!
A Savory Pumpkin Recipe
After all those sweet pumpkin recipes, something savory to finish this off: Pumpkin and Kale Stuffed Shells from Jenn at Veggie Inspired Journey. I LOVE stuffed shells, but I have actually never put pumpkin in them – this is an absolute must try for me!
