Love apple pie but don’t have time for baking? Try this Apple Cinnamon Smoothie aka Apple Pie Smoothie! No refined sugar, gluten-free and vegan.
Who doesn’t like apple pie? It’s probably one of my favorite desserts – oh well, who am I kidding, I’ve had it for breakfast too. I currently don’t have an oven where I could bake, so I had to satisfy my cravings in a different way. Cue this apple cinnamon smoothie aka healthy apple pie smoothie! You really don’t have to feel bad if you eat this one for breakfast, as it has no refined sugar, is gluten-free and also vegan.
Before temperatures drop to a level where smoothies are not that much fun to drink anymore, I wanted to share this second fall themed smoothie recipe with you, after last week’s Pumpkin Pie Smoothie. This is not your ordinary apple cinnamon smoothie though – you can drink it hot or cold, as you use stewed apples instead of raw ones. Raw apples don’t sit well with me, especially in the morning. Stew them with a bit of cinnamon and it’s a whole different story!
You know that I love adding oats to my smoothies to give them more body and substance, so I did this here as well. Not everyone might enjoy that combination though – my boyfriend said that it reminded him of baby food with the oats in there. 😉 Regarding the type of apple to use here: I used Fuji apples, you might want to use a slightly more tart kind, which has a stronger flavor on its own – but that is really up to you and your personal taste. Oh, while I went to the park in order to take the pictures for my Pumpkin Pie Smoothie from last week, this time I went on our roof, where you can see the Manhattan skyline in the back!
- 2 apples
- 2 tbsp oats (optional)
- ¾ cup cashew milk
- Maple Syrup to taste
- Core and cut up apples and stew them for a few minutes with a good dash of cinnamon.
- After apples have stewed to the softness that you like, let them slightly cool down.
- Put cashew milk, ginger (2 good shakes), more cinnamon (1 good shake), oats and the slightly cooled apples in a blender and blend away.
- Taste test the smoothie and add maple syrup until you achieve the desired sweetness.
